With step by step instructions from reviving your starter to baking your first sourdough bread, we’ve made it simple & easy to understand.

Wood Pulp Bread Proving Baskets

Made in Germany from 100% sustainably sourced spruce trees.

These professional grade wood pulp bannetons are perfect for higher-hydration doughs & designed to wick moisture to create an even skin during the final proofing.

High quality, thick-walled & durable they help maintain a consistent temperature & facilitate an easy release of dough.

Please note: variations in wood, natural pigments, colour & consistency throughout each basket is perfectly normal & expected.

Banneton Size & Dough Capacity*

* Dough capacity is based on our experience through test bakes using dough with a hydration of 75% and above.

Small Oval Spiral: Approximate internal dimensions 230mm x 120mm x 70mm. Dough capacity is between 700g - 900g.

Small Round Spiral: Approximate internal dimensions (DxH) 180mm x 70mm. Dough capacity is between 700g - 900g.

Short Oval Spiral: Approximate internal dimensions 230mm x 145mm x 80mm. Dough capacity is between 800g - 1kg.

Large Oval Spiral: Approximate internal dimensions 290mm x 130mm x 70mm. Dough capacity is between 1kg - 1.2kg.

Large Oval Waffle: Approximate internal dimensions 310mm x 135mm x 70mm. Dough capacity is between 1.2kg - 1.4kg.

Large Round Waffle: Approximate internal dimensions (DxH) 220mm x 65mm. Dough capacity is between 1.2kg - 1.4kg.

 

WHY USE A DUTCH OVEN?

Learning how to bake bread with enough steam in a domestic oven is the first challenge for a home baker when embarking on their bread journey. A Dutch oven, which is a pot made entirely of cast iron allows for enough heat & steam to replicate a commercial bread oven environment & so is the preferred method when making bread at home.

Our bread specific Dutch ovens are perfect for baking bread & gives perfect results every time. 

How it works

During the initial stages of baking, steam is released inside the chamber of a Dutch oven (sealed by a lid), this keeps the dough moist allowing the bread to develop a crispy, shiny crust and attain maximal volume.
